15-MIN GREEK SALAD

GREEK SALAD

As the name implies we are trying to create from the basic ingredients the famous Greek Salad. You can have many different twists of this simple recipe. One reason I like this salad is that feta cheese is my favorite fresh type of cheese. Combined with high quality olive oil and fresh veggies it makes a perfectly filling meal.

Ingredients

  • 1 cucumber
  • 4 ripe tomatoes
  • 1 green and 1 red bell pepper
  • 6 black or green olives
  • 1 red onion, peeled and chopped
  • extra virgin olive oil
  • freshly ground black pepper
  • red wine vinegar
  • 200 g feta cheese
  • 1 teaspoon dried oregano

Prep Instructions

  1. Wash all veggies under cold water.
  2. Cut cucumber, green and red pepper and onion into smaller bite-size pieces.
  3. Half the tomatoes and mix with cut vegetables and olives.
  4. Crumble feta cheese and place on top of mix of veggies and sprinkle with dry oregano.
  5. Give it a lug or two of extra virgin olive oil and vinegar.
  6. The salad goes perfectly with a slice of whole wheat bread or any other protein choice if you want to compliment with additional protein serving.
