15-Min Hearty Cauliflower Soup

Cauliflower – you may like or hate it. It was kind of a boring vegetable for me. Until I came across this recipe. What can I say I love soups BIG TIME. Soups were cornerstone of my nutrition in childhood. Rich, filling, nutritious, easy and fast to prepare. Let’s get rolling Foodies!


  • 1 cauliflower cut into florets
  • 1 cup home-made stock
  • 250 grams of coconut milk or plain milk
  • 1-2 bacon slices
  • 1/2 cup thinly cubed tofu
  • 4-5 cloves garlic crushed
  • Chopped coriander
  • 1 tablespoon chopped fresh rosemary
  • 1/2 cup cooked Jasmine rice (for serving)
  • 1-2 tsp of olive or coconut oil
  • Salt

Prep Instructions

  1. In a pot filled with fresh water cook cauliflower florets  for 10-15 minutes and set aside to cool down a little.
  2. Place cooked cauliflower into a blender, add 1/2 cup of chicken stock and coconut milk. Mix all ingredients well.
  3. In a skillet heat up a drop or two of olive or coconut oil add bacon and brown it nicely.
  4. Set fried bacon aside on a paper towel.
  5. Add crushed garlic into the skillet and stirring frequently saute for 2 minutes.
  6. Pour the stock into a bigger pot or a skillet which is wider and deeper to make sure the soup will fit in it. Heat up the stock.
  7. Add the mixture from the blender into the warm stock, add tofu cubes and cook for 10 minutes.
  8. Save some bacon for serving to top soup and you can add the remaining into the skillet with soup.
  9. Garnish your soup with some chopped coriander.
