15-MIN REAL TOMATO SOUP

15-MIN REAL TOMATOES SOUP

Soup – a hallmark meal of my childhood. Fast, furiously nutritious, tasty and lasts for days so get your pots and ladle ready. Let’s get rolling Foodies!

Ingredients

  • 2 cans diced tomatoes, get the better quality (bit more expensive but totally worth it)
  • 1 small can tomato paste
  • 1 cup chicken or vegetable stock
  • 2 eggs, beaten
  • Salt to taste

Prep Instructions

  1. In a medium size pot heat up the stock.
  2. Add tomatoes and tomato paste. Mix well gently. Lower the heat to low and simmer for 10 minutes.
  3. In the meantime beat the eggs either by hand or with a blender on low setting.
  4. Slowly and steadily add the beaten eggs into warm soup mixing infrequently but gently.
  5. Add salt to taste.
  6. You can top it with chopped fresh parsley.

    if you miss the taste of homemade tomato soup but you do not want to add noodles or rice – egg is a perfect addition. Strongly recommend.
