As the name suggests this is a quick meal or mini meal. I prepared that for my business trip. I knew I needed something small, nutritious and tasty. These mini-omelletes passed the test with flying colours. Let’s getting rolling Foodies!
Ingredients
3 whole eggs
1/2 cup fresh or frozen spinach
2 tsp of ground parmesan
1 tsp turmeric powder
Salt and pepper
Prep Instructions
In a bowl whisk the eggs and mix with the rest of the ingredients.
Heat non-stick skillet and pour in the egg mixture.
Cook 5 minutes on one side and 5 minutes on the other side.
You can use different vegetables e.g. finely chopped bell peppers, onions, zucchini. Really whatever you have in your fridge. Just make sure you finely chop veggies to integrate well with whisked eggs. Remember that you have to later roll the omelet.
To fortify with protein add liquid egg whites to whole eggs. Adding turmeric powder which is a great anti-oxidant and has amazing anti-inflammatory benefits create the beautiful golden colour.
These tiny mini egg tortillas taste great with some spicy tomato salsa.
