BAKED SALMON ON VELVET QUINOA

BAKED SALMON ON VELVET QUINOA

Gorgeous meal and as always very simple. Baked salmon on bed of turmeric quinoa super grain with a fresh cucumber garnish. Let’s get rolling Foodies!

Ingredients

  • 250 grams salmon fillet
  • 1/2 cup quinoa
  • 1 teaspoon turmeric powder
  • 1 fresh cucumber, sliced
  • Salt

Prep Instructions

  1. In a medium size pot cook quinoa in slightly salted boiling water on low heat for 10-15 minutes. When cooked add turmeric powder and mix well.
  2. On a non-stick skillet spray some olive oil and cook salmon fillets, 5 minutes each side. You may also cook it on one side covered with a lid for 10 -12 minutes.
  3. Place salmon fillet on a serving of cooked quinoa and garnish with your choice of fresh veggies. I used fresh sliced cucumber.
