Gorgeous meal and as always very simple. Baked salmon on bed of turmeric quinoa super grain with a fresh cucumber garnish. Let’s get rolling Foodies!
Ingredients
250 grams salmon fillet
1/2 cup quinoa
1 teaspoon turmeric powder
1 fresh cucumber, sliced
Salt
Prep Instructions
In a medium size pot cook quinoa in slightly salted boiling water on low heat for 10-15 minutes. When cooked add turmeric powder and mix well.
On a non-stick skillet spray some olive oil and cook salmon fillets, 5 minutes each side. You may also cook it on one side covered with a lid for 10 -12 minutes.
Place salmon fillet on a serving of cooked quinoa and garnish with your choice of fresh veggies. I used fresh sliced cucumber.
