BAKED SALMON WITH GREEN BEANS

BAKED SALMON WITH GREEN BEANS

I admit this is a very simple and obvious recipe. But sometimes we all need some normalcy even in a kitchen without any fancy ingredients or cooking methods. And I like salmon. With green beans it makes it a relatively light and very filling meal. Let’s get rolling Foodies!

Ingredients

  • 2 salmon fillets (around 200 grams each)
  • 400 grams green beans
  • Fresh lemon juice (1/2 lemon)
  • Ripe small tomatoes, halved
  • Salt

Prep Instructions

  1. Heat the oven to 180 degrees Celsius.
  2. Wash salmon fillets under cold water, season with salt and place on a baking sheet. Place in an oven for 20 minutes.
  3. While salmon fillets are being cooked, prepare green beans. In a small pot inĀ  slightly salted water cook trimmed green beans for around 25 minutes.
  4. Place your salmon on a plate and surround with the beans and halved ripe tomatoes.
  5. Drizzle all with a bit of extra virgin olive oil.
