BEEF OXTAIL ON VEGGIES

BEEF OXTAIL ON VEGGIES

Well I admit that once you cook the oxtail – inexpensive and amazingly juicy and meaty beef – you can pair it with countless side dishes. In this recipe I used this falling of the bone treat with pappardelle pasta. This time let’s take a lighter approach and add this tender and juicy beef to a sauted vegetable mix. Let’s get rolling Foodies!

Ingredients

Oxtail

  • 1 kg of beef oxtail (cut into pieces)
  • 1/4 cup of soy sauce
  • 2 cans of plum tomatoes
  • 1 small can of tomato paste
  • Salt and pepper

Vegetables

  • 2 carrots
  • 1 cup brussel sprouts (fresh or frozen)
  • 1 leek, chopped
  • 1 cup cooked potatoes
  • 1 crushed garlic clove
  • 1 bay laurel
  • 1 cup snow peas (fresh or frozen)

 

Prep Instructions

Oxtail

  1. Have your butcher cut your oxtail into fist size pieces. Wash under cold water.
  2. Place all in a pressure cooker (or a slow cooker) depending on what tool you are going too use. My experience: for a very long time I was using slow cooker overnight on slow (around 8 hours) and the meat was falling apart in the morning. Recently I introduced a pressure cooker to my kitchen and boy am I not using CrockPot for some time now. However both appliances work absolutely great.
  3. Season the meat with salt, pepper and drizzle with soy sauce directly in a pressure cooker or CrockPot.
  4. Add tomatoes and tomato paste. Mix all well. If you are using a pressure cooker add at least a cup of water.
  5. Cook with a closed lid for 1,5 hours in a pressure cooker since the pressure has been achieved. And for 8 hours on slow in CorckPot.
  6. Release pressure using quick release valve. Remove lid and set aside to cool down. Open your pressure cooker ONLY when all the pressure has been released to make sure it is safe. It is easier with the slow cooker – just turn it off and open the lid.

Vegetables

  1. Cook your carrots and tomatoes for 15 minutes while oxtail is cooking and set aside to cool down.
  2. Add 1 tsp of olive oil into a skillet, add ground garlic, chopped leek, Bay laurel leaf, snow peas.  Sauté all ingredients for 5-10 minutes. Add  a piece of cooked oxtail with some sauce and give it a stir fry to combine all the flavours.
  3. Serve hot immediately and pack a portion for filling and absolutely gorgeous meal in the office.
