Super easy, filling and tasty dinner. Mashed peas bring out the color, dense potato mash brings the energy and tender chicken comes with some protein. Let’s get cooking Foodies!
Ingredients
8 chicken drumsticks
1 cup peas, frozen or fresh
3 cooked potatoes, mashed
2 tablespoons soy sauce
Red paprika powder
Garlic powder
Red chili pepper flakes
Salt
Prep Instructions
Sprinkle chicken drumsticks with soy sauce, season with garlic salt, red paprika and chili flakes. Cook in the oven at 180 degrees Celsius for 25-30 minutes.
While chicken is being cooked, prepare your mash. Add water into 2 medium pots and cook potatoes and peas. Add a pinch of salt to both pots. Potatoes cooking time is around 25 minutes if you cut potatoes into smaller pieces. Cooking peas around the same but on low heat.
When potatoes and peas are cooked use your hand food processor and mash both potatoes and peas into silk smooth paste adding some pepper and maybe a few drops of extra virgin olive oil.
Serve immediately and pack into lunch boxes for your busy lunch in the office.
