GRILLED CHICKEN KEBABS

Chicken Skewers Kebabs with Grilled Veggies

This meal is really easy and fast to prepare. It is colorful, nutritious and Power Cooking friendly. Always make more than just for one meal. This way you can take it to the office for a healthy and tasty foodie lunch or snack. You can add different type of meat. I like to diversify it with some leaner parts of lamb. It adds additional flavor and different is never boring.

Ingredients

  • 3 chicken breasts
  • 2 onions
  • 2 medium size zucchinis
  • 2 red bell peppers (or green or yellow, whichever you happen to have)
  • Salt and pepper
  • Turmeric powder
  • Chili pepper flakes

Prep Instructions

1. Season the chicken and veggies with salt, pepper, turmeric powder and your favorite spices. You can add some cayenne pepper to spice things up.
2. Put on skewers in random order chicken cubes and veggies.
3. Spray the kebabs with some olive oil. Place in the oven with temp of 200 C degrees for 25 minutes.
4. When kebabs cool down you can take the meat and veggies off the skewers (to pack for an office meal) or bite off the skewers the tender meat and juicy veggies.

Serve with your favorite side dish. If you want to keep it lean and lower in calories skip the side dish. Just have the meat and grilled veggies from the skewers. But if you worked out hard and gained these tasty carbs then brown rice, sweet potatoes or other starchy carbs go perfect with this dish.
