Light and yet very rich and filling. The first time I prepared this meal while working in Barcelona. Very hot in the office and outside. So I was looking for something refreshing, light yet rewarding and filling me full for longer. Chickpeas is a great low glycemic carb and feta cheese brings the moisture and taste. Combined with ripe tomatoes and refreshing mint this meal makes a perfect treat for a foodie lunch or a snack and or a mini-meal.
