Chipotle Beef Stew

Well it is happening, winter is coming. And it is not to quote John Snow of the Games of Thrones. It really is coming. But before that the autumn will come. The soon to arrive autumn and later winter will open the whole new recipe range: even more soups and stews. This stew is very simple to prepare and carries a load of the most powerful and nutritious tastes. Beware as it is spicy!!! But you can tame it by adding less chipotle peppers.

  • 1 kilo farm raised beef, cubed into 1-2 inch pieces (do not opt in for the leanest part, you can chose front shoulder or  rear end )
  • 1 can tomato paste
  • 1 can tomatoes
  • 2 tablespoons chipotle in adobe sauce, ground chipotles with sauce (just use your food processor)
  • 1 teaspoon salt
  • 2 cups chicken or vegetable broth
  • 2 tablespoons coconut oil

Prep Instructions

  1. In a pressure cooker with no lid on heat up coconut oil.
  2. When oil is hot add cubes of meat and let it fry for 2-3 minutes.
  3. While beef cubes are frying add tomatoes, tomato paste and ground chipotles with adobe sauce.
  4. Sprinkle with salt and mix all ingredients to cover fried meat cubes with the chipotles, tomato paste and tomatoes.
  5. Add chicken or vegetable broth and bring everything to boil.
  6. Cover the pressure with a lid and set on high.
  7. Lower the temperature to medium and cook on high pressure setting for 1 hour.
  8. If you are using traditional pot, cook on stove on medium low heat for 2 -3 hours or 2 hours in an oven at 180 degrees Celsius in a cast iron Dutch oven.
