Coquelets with Green Beans in Thyme Tomatoes

I love little birds. Their meat is very lean and very tender. Plus it takes much less time to cook them. Just season two Spring Chickens with your favorite spices and let them cook on medium heat on the oven. You can combine them with simple salad or spare beans which I used. Perfectly balanced meal.

Ingredients

  • 2 spring chickens
  • 200 grams broad beans
  • Pinch of thyme, salt and red paprika
  • 2 teaspoons olive oil

Prep Instructions

  1. In a medium pot or larger depending on the size of your spring chicken heat up the oil.
  2. In the meantime season spring chickens with the spices.
  3. Place both chickens in the hot oil and give them a quick round of frying.
  4. Lower temperature to medium-low, add some water and cover with a lid.
  5. Cook for 30 minutes trying not to uncover.
  6. In another pot filled with slightly salted water add broad beans and cook for 10 minutes. I used jarred broad beans so this is only for warming them up. If you use dry broad beans locate appropriate time for cooking them (much longer, just follow instructions on the beans label).
