Chicken, red bell peppers, onions, spices, guacamole and tortillas. Putting these together in a sequence produce really quick and tasty home-made Mexican feast.
Ingredients
Chicken fajitas
2 chicken breasts sliced in stripes
2 red and green bell peppers sliced in stripes
2 onions sliced in stripes
1/4 cup of light Greek yogurt
4-6 corn or whole-wheat tortillas
Fajitas spice seasoning store-bought or home-made
1 tbsp olive or coconut oil
Guacamole
1 ripe avocado
2 tbsp freshly squeezed lemon juice
1/2 finely chopped onion
Salt and pepper

Prep Instructions
Chicken fajitas
Heat oil on a skillet and stripes of chicken. Add a pinch or 2 of fajitas spice mix. Cook until browned and set aside.
Add to the hot pan stripes of onions and bell peppers and sprinkle with fajitas seasoning. Saute for 5-8 minutes on high until the vegetables soften and absorb the fajitas spice mix flavor.
Add browned chicken stripes and mix all ingredients well. Cook for 5 minutes longer until all spice has been well absorbed.
Heat up your tortillas briefly on a flat pancake pan.
Guacamole
Cut your avocado in half. Scrub out the flesh of avocado into a bowl.
Add lemon juice, finely chopped onion, salt and pepper.
Crush avocado with a fork and mix all ingredients well
