GROUND LEAN BEEF & AMARANTH MEATLOAF

Great for different types of side dish. I use it for lunches and dinners, sandwiches and wraps. Just bake a few of such meatloaves and place them in a freezer. Then when life gets in your way just take one slice at a time out of your freezer and you are set for a great meal. Let’s get rolling Foodies!

MAKE SURE YOU HAVE ALL INGREDIENTS IN PLACE
AMARANTH OATS

Ingredients

  • 1 onion
  • 2 tbsp olive oil
  • 1/2 cup amaranth oats
  • 2 teaspoons dried oregano
  • 2 heaped teaspoons Dijon mustard
  • 500 g quality groundĀ beef
  • 1 large egg (free range if available)
  • 2 sprigs of fresh rosemary
  • 2 teaspoons of freshly squeezed lemon
  • 2 cloves of garlic, crushed
  • 1 tesapoon smoked red paprika
  • 1 x 400 g tins of plum tomatoes
  • 2 tablespoons balsamic vinegar
ALL INGREDIENTS IN A BOWL, TIME TO GET YOUR HANDS DIRTY
TIME TO PLACE THE MEATLOAD INTO THE OVEN

Prep Instructions

  1. Heat up the oven to 200 degrees C.
  2. While the oven is getting warmed place all ingredients except balsamic vinegar into a bowl and mix with your hands. Just make sure you have cleaned your hands before.
  3. Place the mix into a baking form and top with balsamic vinegar.
  4. Cook in the oven at 200 degrees C for 45 minutes.
LET IT COOL DOWN BEFORE YOU START SLICING IT INTO PIECES
