HOME-MADE COLESLAW

HOME-MADE HEALTHY AND YUMMY COLESLAW

It is my typical approach. Think what I like and adjust the recipe to get an equally tasting meal but healthier and cleaner without unnecessary sugar and fat load. The coleslaw is a real hit. It is full of cheap and fresh ingredients and super easy and fast to make. It also stores well in a fridge so you should prepare an extra portion for taking to the office. Let’s roll Foodies!

Ingredients

  • 1/2 white raw cabbage
  • 2 carrots
  • 1 tsp of Dijon mustard
  • 1 tsp of light mayo (yes I do include mayo in this recipe, healthy is all about moderation including moderation:-)
  • 1/2 cup of Greek yogurt

Prep Instructions

  1. In kitchen blender shred cabbage and carrots.
  2. Mix well mustard, mayo and yogurt until you receive a smooth consistency sauce.
  3. Combine sauce with grated cabbage and carrots and mix well so the sauce is well distributed.
  4. You can now enjoy your coleslaw or put it into a fridge for an hour to chill it down.
  5. Make an extra batch as it keeps well (up to 4-5 days in a fridge).
  6. Combine with your favourite protein dish like chicken or lean beef.
