JUICY LEAN CHICKEN BREASTS

It seems so boring I know. Lean chicken breasts usually dry out during the cooking process, come out pale and when paired with rice and broccoli it sounds like a typical bodybuilding post – workout meal. I admit I ate just like that for a long time before I lost all the unnecessary pounds of fat. But then I worked real hard how to re-invent it and and introduce the new better version of this protein staple in my diet. More colorful, juicier and tender. Let’s get grilling Foodies!

Ingredients

  • 2 kg of chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons red ground paprika
  • Fresh thyme
  • A pinch of salt

Prep Instructions

  1. Heat up the oven to 180 degrees Celsius (350F).
  2. In a bowl mix olive oil with red paprika, chopped fresh thyme and salt. Spread the mixture onto each chicken breast.
  3. Place all chicken breasts on a baking sheet and put in the oven. Cook for 15-20 minutes depending on the chicken breast size. If you have bigger pieces go for 20 minutes while smaller pieces will require no more than 15 minutes.

    This is great idea to add fresh thyme or rosemary to chicken breast. I have planned powercooking for saturday so i have ready meals for whole week. Great tip!

    For efficiency reasons I always prepare the whole batch of chicken breasts. This is a highly power-cooking-friendly protein that I always batch-cook. I calculate how many times in the next 4-5 days I want to eat chicken as my protein source in my meals and the rest goes into the freezer. A great tip is to cut some of the breasts into stripes or pieces and freeze in baggies. This way you can just unfreeze a smaller portion to add to your salad or sandwich. Sky is the limit here and the cooked chicken can be used in very different dishes starting from salad, sandwiches and just as a snack with a your choice of veggies and favorite salsa.
