Juicy Sweet & Sour Rolled Oats Granola

Home-made granola. It is one of the meals that is good and good for you. It consists of just 5 ingredients, preparation takes just minutes and it stores well in the fridge for days.  It is an amazingly rich mixture of sweet, sour and crusty tastes. The whole thing is sprinkled with cinnamon and touched slightly with organic honey. After just 45 minutes in the oven it literally melts in your month. But beware, this baby is rich in caloric value so try to deserve it by being more active e.g. doing a quick workout session.


  • 2 cups of rolled spelt flakes (steel -cut spelt oats)
  • 3 cups of fresh plums
  • 1/4 cup of organic honey
  • 1/4 cup of ground cinnamon
  • 1 cup of coconut milk

Prep Instructions

1. In a bowl mix well rolled oats, cinnamon and coconut milk to achieve a solid consistency mixture.

2. Spray a baking dish with coconut or olive oil.

3. Spread the first layer of the mixture on the baking form.

4. Sprinkle with cinnamon and place another layer of plumbs.

5. Repeat with 1-2 more layers or until you run out of the ingredients (that’s what I did).

6. To add a little honey-bunny extra sweetness kick on each layer sprinkle with organic honey.

7. Bake in 200 degrees Celsius for 45 minutes until the top gets nicely browned and crunchy.

8. Let it cool down (or have some hot granola directly after baking it) and refrigerate overnight.

9. Cut into even portion slices and pack for a nice and solid replenishment in the office.

    The granola is very nutrient-rich meal. As it has been home made this ensures one thing: control over the ingredients and lack of any industrial baking additives. It is also loaded with a lot of fiber that slows down the insulin spikes and keeps you filled longer during the long office hours. I always try to time this kind of meal after being more physically  active. I spend half my lunch time working out and this meal is perfect as a post workout dessert that is replenishing the much needed glycogen levels in my body.

    It keeps well in the fridge 4-5 days easily. So what I do is cut into smaller portions and have it stored in my lunch boxes. I just grab and go with one to the office. No more excuses to say no time for breakfast.

    Nutritional Benefits on Spelt Oats (Spelt Flakes)

    Spelt is a good source of protein, containing all eight of the essential amino acids your body cannot make. A half-cup serving contains 5 g of protein, which should make up 10 to 35 percent of your daily calorie intake. Spelt is a member of the wheat family and it contains the protein gluten which is not a good choice for people with a gluten allergy. Spelt is also a rich natural source of iron which is an essential mineral helping hemoglobin in transporting oxygen in a body. Being deficient in iron affects one’s ability to concentrate and increase risk of developing infection.
