LEAN BEEF JUICY WRAPS

LEAN BEEF JUICY ONION AND PICKLES WRAPS WITH A BACON TOUCH

Ingredients

  • 6 large thin cuts of lean beef (the bigger and thinner the easier it will be to wrap these babies)
  • 4 tsp of Dijon mustard
  • 1 onion finely chopped
  • 200 grams of finely cut bacon
  • 2 finely chopped pickles
  • Salt and peper

Prep Instructions

  1. Sprinkle beef cuts with salt and pepper from both sides.
  2. Spread generously one side of beef wraps with Dijon mustard.
  3. Place chopped pickles, onions and bacon on each beef cut in the middle section.
  4. Wrap beef cuts nice and easy to form a closed fist shaped wrap.
  5. Use cooking thread to secure wraps.
  6. Heat a pan with some coconut oil. You can also use Ghi (clarified butter) which is great for higher temps.
  7. Quickly brown both sides of wraps and transfer to a pressure cooker or a slow cooker. For this recipe I used a pressure cooker.
  8. Add 250 ml of water into a pressure cooker and close the lid.
  9. Cook 45 minutes since the time the cooker has reached pressure on high setting or 4 hours in a slow cooker on high.

The wraps are really tender after 45 minutes in a pressure cooker. They are moist and juicy from the onions, pickles and bacon inside each wrap. One such wrap is a great comforting companion during hungry work week lunch. And paired with your choice of a side dish makes a complete, home cooked treat to your office. I suggest have a bunch of greens as a side dish. But if you were active foodie i.e. had a nice workout definitely add some starchy side dish like rice, chickpeas and maybe bulgur. Anything really goes great with these wraps.
