LEAN BEEF JUICY MEAT BALLS

LEAN BEEF SAUCY AND MOIST MEAT BALLS

Love it, love it, love it. And it’s really easy. You can pair these meat balls with pasta (if you deserved the carbs aka moved a lot or had a nice session in a gym) or any type of vegetables or low-glycemic carbs (cauliflower rice or spaghetti squash). Or just go with a big greens variety salad. Anyhow this is a mega Powercooking-friendly meal. Make a triple batch of the sauce and the balls for later. Let’s get rolling foodies!

Ingredients

Meatballs

  • 2 kg lean ground beef
  • 2-3 garlic cloves, crushed
  • 2 tsp of finely chopped fresh thyme (or dried)
  • 1 whole egg
  • 2-3 tbs of oats flour
  • Salt and pepper

Sauce

  • 4 cans of whole tomatoes
  • 1 small can of tomato paste
  • 2 chopped garlic cloves
  • 1 small onion, finely chopped
  • 1-2 anchovies
  • 2 tbsp olive oil
  • Spicy red pepper flakes
  • Salt and pepper

 

Prep Instructions

Meatballs

  1. In a bowl place ground beef, crushed garlic, onion, thyme, whole egg, oats flour and a pinch of salt and pepper.
  2. With clean hands (it gets messy here:-) mix well all ingredients and shape medium size meat balls (smaller or bigger based on your preference) and place on a side board.
  3. Heat up a pan and place all meat balls frying for a 3-5 minutes on high. I did not add any oil. You only want to brown the meat balls from each side.
  4. Place aside the browned meat balls.

Sauce

  1. In a wider sauce pan heat up olive oil, add garlic, onion and anchovies. Sauté for 2-3 minutes on high heat. Crush anchovies with a spatula to integrate it well with garlic and onion. Be careful not to burn the ingredients.
  2. Add tomatoes, tomato paste, red pepper flakes, a pinch of salt and pepper. If you like a spicy kick in your sauce add spicy red pepper flakes. Mix well and lower heat to low setting.
  3. Add browned meat balls to the sauce and cover with a lid.
  4. Cook for 30 minutes on low if using a normal pan mixing from time to time. If you are using a pressure cooker cook on high pressure setting for 15 minutes.
