This is one of my lightest meals. I like to add other grains than just rice to my meals. Millet is an amazing grain. Its thick and juicy consistency makes it a perfect pair with lean protein like chicken breast.
Ingredients
1/2 cup millet
1 tsp turmeric powder
4 chicken breasts
Salt
Pepper
Ground red paprika
2 crushed garlic cloves
2 carrots (cut into 4 cm/2 inch stripes)
2 celery stalks (cut into 4 cm/2 inch stripes)
Olive oil
Prep Instructions
Cook millet simmering for 8-10 min in water with 1 tsp of salt (or less if you prefer) and 1 tsp of turmeric.
Under cold water clean chicken breasts and dry with paper towel. Season them with salt, ground cumin, crushed garlic and red paprika.
Bake chicken in the oven at 200 degrees C for 20-25 min.
Place millet on a plate and your lunch box. In the meantime cut your chicken breasts into 1 cm (0,5 inch) slices.
Pair it with thinly cut celery stalks and carrot. You can add vegetable of your choice or use what you currently have in the fridge.
Millet ranks as the sixth most important grain in the world, sustaining more than a third of the world’s population. It was one of the first grains to be domesticated and was a staple in Africa and Asia for thousands of years. It remains popular on both continents and in Eastern Europe and has a mild corn flavour.
Nutritional benefits
Millet is gluten free and easy to digest. It is a good source of manganese and also contains a moderate amount of dietary fiber, as well as minerals zinc, copper and phosphorus, and various phytochemicals.
