Lean Cottage With Spicy Chickpeas

Super fast meal. Very basic ingredients. Vivid flavor. And extra edgy spiciness. Put all ingredients together and mix. Serve as a snack or for breakfast if you want to break the monotony of healthy rolled oats. Works both ways for me. Let’s get rolling Foodies!

Ingredients

  • 2 cups chickpeas
  • 1/2 cup low fat cottage cheese
  • 2 tablespoons extra virgin olive oil
  • Fresh chives, chopped
  • Spicy mix of chilli, garlic & basil (I used a pinch of store bought all’Arrabbiata Spice Mix)
  • Fresh mint leaves, chopped (optional)

Prep Instructions

  1. Place chickpeas in a bowl.
  2. Sprinkle with spice mix.
  3. Top with cottage cheese and chives.
  4. Sprinkle with olive oil and mix gently.
  5. Serve cold. Best to prepare in the evening and take out to the office in the morning.
  6. Optionally you can add chopped fresh mint leaves. They will add extra freshness. Perfect for a hot day snack or break the overnight fast.
