MEXICAN EGGS AND BEANS ON RICE MIX

MEXICAN EGGS AND PINTO BEANS ON RICE

Seriously this meal recipe came up by accident. Without a trace of inspiration and big cooking session planning I just took out of my fridge the ingredients I had. I have to tell you that I was surprised. That’s why I decided to share this simple recipe with you. Let’s get rolling Foodies!

Ingredients

  • 1 cup pinto beans (you could use black beans as well)
  • 1/2 cup cooked rice
  • 1 red onion, roughly chopped
  • 1 red bell pepper, chopped
  • 1 ripe tomato, chopped
  • 1-2 chipotles peppers in adobo sauce, roughly chopped
  • 1-2 teaspoons taco seasoning

Prep Instructions

  1. On a skillet heat up the oil, add chopped onion, red bell pepper, tomato and chipotles peppers with the sauce and saute for 5-7 minutes.
  2. Add the taco spice and mix well all ingredients.
  3. Add the pinto or black beans and again mix all ingredients. Cook for 5 minutes longer.
  4. Serve with a turmeric Jasmine rice or fried eggs on the side.
