Minty Spelt And Nuts Salad

Perfect salad for an active day. The main component of the salad is my favorite type of whole wheat – spelt. I takes more time to cook it but believe me it is worth it. The crunchy consistency of the cooked spelt grains is giving so much flavor and crunch that it is easy to make it the main character of this show. Let’s get rolling Foodies!


  • 1/2 cup whole wheat spelt grain
  • 1 cup water
  • 1 teaspoon turmeric powder
  • A handful of raw cashews and walnuts
  • 1 teaspoon dry mint or 1 handful of fresh mint, chopped
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste

Prep Instructions

  1. Bring water to boiling and add spelt grain. Cook for 45 minutes on low.
  2. In the meantime prepare the rest of ingredients.  Chop mint finely if you are using fresh.
  3. Place cooked spelt in a salad bowl.
  4. Add mint, cashews and olive oil.
  5. Mix well and add salt to taste.

This salad is a perfect side dish but can also serve as an energy source next to your protein of choice on your plate. Remember that it is best to deserve this salad by having a workout before as spelt is a good source of complex carbs. And if you are trying to slash some weight it is best to make sure we have moved and been active before.

Try to cook more spelt as it takes at least 45 minutes. You can use the cooked spelt in many different ways. You can create different salad, use it as a nice side dish, make mini-meals or snacks.
