Ingredients

  • 1 cup cubed fresh pineapple
  • 2 celery stalks
  • 1 red bell pepper, finely chopped
  • 1/2 red onion, finely chopped
  • A fist of fresh mint leaves, chopped
  • 2 teaspoons extra virgin olive oil

Prep Instructions
