Pork Tenderloin Tacos

Mexican is one of my favorite cuisines. Except I want to have the best of the both worlds: Mexican and Healthy. With these tacos you can be sure of getting just that. Let’s get rolling Foodies!


  • 400 grams pork tenderloin
  • Fresh spinach, roughly chopped
  • 1 onion, finely chopped
  • 1 ripe tomato, finely chopped
  • 1/4 cup natural yogurt
  • 1/4 cup cubed fresh pineapple
  • Whole-wheat tortillas
  • Chipotle in adobo sauce, finely chopped
  • Salt to taste

Prep Instructions

  1. Cut the tenderloin into 2 cm wide pieces.
  2. Season the pork tenderloin pieces with salt and pepper.
  3. Heat up a pan and cook the tenderloin pieces until nicely browned on both sides. 2-3 minutes each side should do it.
  4. Clean spinach and tomato under cold water and finely chop. Chop the onion thinly. Set aside in small bowls.
  5.  Thinly slice the cooked tenderloin pieces.
  6.  On low heat place a wide non-stick skillet and with tortillas inside. Just keep them on for 4-5 minutes until soft.
  7. On a separate plate place a warm tortilla and assemble your tacos. I layer the tortilla with a bunch of chopped spinach, tomatoes, onions and pineapple. Then I add a small portion of the chopped pieces of tenderloin and add a teaspoon of yogurt on top. Then I wrap it and enjoy this baby.
