PRAWNS AND BACON PAPPARDELLE

You have to deserve the carbs baby! But once you do have this dish. It is a nice combination of al dente pappardelle with nicely browned prawns and pieces of bacon on garlic and chipotle.

Ingredients

  • 250 grams prawns (frozen)
  • 250 grams papperdelle pasta
  • 100 grams bacon, cubed thinly
  • 2-3 garlic cloves, thinly chopped
  • 1 teaspoon chipotle in adobe sauce, crushed
  • 1-2 teaspoons olive oil

Prep Instructions

  1. On a non-stick skillet heat up oil and add bacon, prawns, chipotle and garlic. Sauté on low-medium heat until nicely browned (about 15 minutes).
  2. In a separate pot filled with slightly salted water cook pappardelle pasta. Follow instructions on cooking time from the pasta you are using.
  3. Drain cooked papperdelle and add into the skillet with prawns and bacon. Gently mix and serve with some grated parmesan (optional).
