Pulled Pork Knuckle Leftovers on Turmeric Rice

Pulled Pork Knuckle Leftovers on Turmeric Rice

This meal is just an example of how batch cooking can be easily leveraged when you have the core ingredient already prepared in bigger quantity. It is based on this Pork Knuckle recipe available here. So all you need to prepare is simply cook your side dish – I picked turmeric brown rice – and pair it with the pulled pork knuckle. Let’s get rolling Foodies!

  • 250 grams of pulled pork (recipe available here)
  • 200 grams brown rice
  • A pinch of turmeric powder
  • Fresh parsley, finely chopped
  • Salt to taste

Prep Instructions

  1. Cook brown rice in boiling water on medium heat for 25 minutes. See instructions on how long to cook rice you are using (it may vary from the timing I am suggesting)
  2. Add a pinch of turmeric powder and salt to the boiling rice
  3. While rice is cooking heat up a portion of pork knuckle and pull it apart with 2 forks.
  4. When rice is cooked, set it aside and drain any left water.
  5. Serve pulled pork on top of a rice serving and sprinkle with chopped fresh parsley.
