One of a big advantage of meal planning is that at least in my case food waste went down significantly. But it does happen that I get some ingredients left in the fridge with no specific recipe in mind. This meal is a basically an improvisation with no expectation. And very often it happens that these are the best. It was the case with this meal.

Ingredients

  • 300 grams of cod fillet with no skin
  • 2 potatoes or sweet potatoes (if you prefer these)
  • 3 carrots raw
  • 2 celery sticks
  • Olive or coconut oil
  • Fresh chopped parsley leaves
  • Salt and pepper

Prep Instructions

  1. Heat 1 tsp of olive oil in a skillet.
  2. Season cod fillet with salt and pepper.
  3. Cook on small heat for 5 minutes each side of cod fillet until cooked.
  4. While preparing cod boil water and cook your potatoes, it takes no more than 20 minutes (tip: I add a pinch of turmeric into boiling water to bring out the beautiful golden color).
  5. Cut your carrots and celery talks into thinner stripes.
  6. Serve in your favorite dish and sprinkle with finely chopped fresh parsley.

Variations

Instead of cod you could use haddock, whiting or tilapia fillet. For the side dish you can replace with jasmine rice or millet.
