This quick raw leek salad is very refreshing. Composed of just 4 ingredients makes a no-time quick veggie snack. Pairs well with a nice piece of grilled and tender chicken. Let’s get rolling Foodies!
Ingredients
1 leek
1/2 cup Greek-style yogurt
Salt and pepper
Prep Instructions
Cut leek alongside in half and clean under cold water.
Chop finely cleaned leek.
Place chopped leek in to a bowl and salt and pepper to taste. Set aside for 5 minutes.
Add yogurt to chopped leek and mix well.
This salad keeps well in a fridge for at least a couple of days so feel free to double the recipe.
Leeks are an excellent source of vitamin K. They are very good source of manganese, vitamin B6, copper, iron, folate, and vitamin C. Leeks are also a good source of vitamin A in the form of carotenoids, dietary fiber, magnesium, vitamin E, calcium, and omega-3 fatty acids.
