QUICK CREAMY YOGURT LEEK SALAD

This quick raw leek salad is very refreshing. Composed of just 4 ingredients makes a no-time quick veggie snack. Pairs well with a nice piece of grilled and tender chicken. Let’s get rolling Foodies!

Ingredients

  • 1 leek
  • 1/2 cup Greek-style yogurt
  • Salt and pepper

Prep Instructions

  1. Cut leek alongside in half and clean under cold water.
  2. Chop finely cleaned leek.
  3. Place chopped leek in to a bowl and salt and pepper to taste. Set aside for 5 minutes.
  4. Add yogurt to chopped leek and mix well.
  5. This salad keeps well in a fridge for at least a couple of days so feel free to double the recipe.
