QUICK PAN CHICKEN BREAST WITH BACON AND LEEK

As the name implies it is a quick and one pan meal. You can use different type of vegetable instead of the leek. I like using chopped leek with lean proteins. It is very juicy and once sauteed it brings up the flavor and freshness of the whole meal. Let’s get rolling Foodies!

Ingredients

  • 2 chicken breasts, cubed
  • 1 bacon slice, chopped into stripes
  • 1/2 cup chopped celery stalks
  • 1 leek, finely chopped
  • 2 garlic cloves, finely chopped
  • Fresh thyme, finely chopped
  • 1 teaspoon olive oil

Prep Instructions

  1. Heat up the oil in a medium size skillet.
  2. Add bacon a saute for 2-3 minutes. Throw in the leek and celery and continue with sauteing all for the next 5 minutes.
  3. Add thyme and garlic, mix well and saute for 3 minutes.
  4. Place all on a separate plate and add the chicken cubes onto the same skillet and cook until slightly browned – around 10 minutes.
  5. Add the sauteed vegetables and mix with the chicken.
