QUICK ROASTED TOFU WITH VEGGIES

QUICK ROASTED TOFU WITH VEGGIES

If you want to have a quick breakfast, lunch or dinner with meatless protein this might be an interesting recipe for you. I should call it throw all into a skillet and saute nicely. It’s because it is so easy a 5-year old could easily create this meal. Full of fresh ingredients and mostly veggies but still a complete meal due to complex protein in form of firm tofu. Let’s get rolling Foodies!

Ingredients

  • 250 grams firm tofu, cut into 2 cm cubes
  • 2 sliced carrots
  • 1 cup brussel sprouts, fresh or frozen
  • 1 cup snow peas, fresh or frozen
  • 1 cup celery stalks, think slices
  • 1 onion, finely chopped
  • 2 cooked potatoes
  • A bunch of freshly chopped parsley
  • 2-3 garlic cloves, thinly sliced
  • 1 teaspoon turmeric powder
  • A pinch of red chili pepper flakes
  • Salt to taste
  • 2 teaspoons coconut or olive oil

Prep Instructions

  1. In a medium size pot cook potatoes (around 20-25 min) and set aside.
  2. On a skillet add the oil, heat it up and saute garlic for 2-3 minutes. Add the remaining vegetables and saute for 7-10 minutes. Add turmeric, salt and pepper flakes (if using it) and mix.
  3. Add cubes of tofu and mix well. Cook for additional 5 minutes and serve. Make an extra batch for the work week lunch or a snack.
