QUICK SCRAMBLED EGGS WITH PANCETTA

QUICK SCRAMBLED EGGS WITH PANCETTA

Nothing keeps filled and energized longer than a simple and quick scrambled eggs. This version is enhanced with two slices of pancetta and fresh chopped chives. It is absolutely EGGOLICIOUS. Let’s get rolling Foodies!

Ingredients

  • 4 whole organic eggs (egg whites can be used to make the meal leaner)
  • 2 slices of pancetta or bacon (turkey bacon could also be used to make the meal leaner)
  • Fresh chives, chopped
  • Salt

Prep Instructions

  1. Heat a medium or small non stick skillet and place small cuts of pancetta or bacon. Cook for 2-3 minutes until nicely browned.
  2. Crack the eggs and cook on small heat for 5 minutes.
  3. Mix gently the eggs and pancetta until firm and combined. Sprinkle the eggs with freshly chopped chives.
  4. Serve with 2 nicely toasted whole wheat bread toasts.
