Colors, colors and colors. I love the vivid colors of this salad. Crunch of the cooked turmeric spelt grains and freshness of radishes makes eating this salad just like the first spring day after long, cold winter. Let’s get crunching Foodies!
Ingredients
1/2 cup whole wheat spelt grain
1 cup water
1 teaspoon turmeric powder
Bunch of fresh parsley, chopped
1/4 cup raisins
10 radishes, thinly sliced
2 tablespoons of extra virgin olive oil
Salt to taste
Prep Instructions
Bring water to boiling and add spelt grain. Cook for 45 minutes on low.
In the meantime prepare the rest of ingredients. Chop fresh parsley leaves. Slice radishes and onion.
Place cooked spelt in a salad bowl.
Add chopped parsley, radishes, onion and raisins and olive oil.
Mix well all ingredients to distribute equally all the tastes. Add salt to taste. If you like a bit of spicy kick, sprinkle red chili pepper flakes.
