Roasted Brussels Sprouts & Snow Peas With Bacon

Combining the greens with a little bit of bacon makes it a perfect Paleo-style meal. Loaded with dark green vegetables, juicy scallions and tasty bacon. Feel free to replace the classic bacon with leaner types made of turkey. Let’s get rolling Foodies!


  • 1 cup scallions
  • 4 garlic cloves, thinly cut
  • 1 cup brussels sprouts
  • 1 cup snow peas
  •  2 tablespoons olive oil
  • Salt and pepper

Prep Instructions

  1. In a skillet heat up olive oil and add scallions. Sauté for 5 minutes on high heat until slightly brown and translucent. Add bacon stripes and cook for additional 5 minutes.
  2. Lower the heat to medium, add garlic and sauté for additional 2-3 minutes.
  3. Add brussels sprouts and snow pease and mix well all ingredients. Add a pinch of salt and pepper. Cover with a lid and cook for 10 minutes on low heat. Check if brussels sprouts are done by sticking a fork into a few of them. They should be soft inside and nicely brown outside. Snow peas should be ready as it cooks faster.
