ROASTED BRUSSELS SPROUTS WITH SNOW PEAS

Roasted Brussels Sprouts & Snow Peas With Bacon

This is a vegetarian twist of this recipe. It’s amazing of how one can diversify meals based on even the same recipe and adjust it to one’s liking or preferences. Simply take out the bacon and have a great side made mostly of veggies. Let’s get rolling Foodies!

Ingredients

  • 1 cup scallions
  • 4 garlic cloves, thinly cut
  • 1 cup brussels sprouts
  • 1 cup snow peas
  • 2 tablespoons olive oil
  • Salt and pepper

Prep Instructions

  1. In a skillet heat up olive oil and add scallions. Sauté for 5 minutes on high heat until slightly brown and translucent.
  2. Lower the heat to medium, add garlic and sauté for additional 2-3 minutes.
  3. Add brussel sprouts and snow peas and mix well all ingredients. Add a pinch of salt and pepper. Cover with a lid and cook for 10 minutes on low heat. Check if brussel sprouts are done by sticking a fork into a few of them. They should be soft inside and nicely brown outside. Snow peas should be ready as it cooks faster.
