SALMON IN RED CURRY

SALMON IN RED CURRY

I know this sounds like a strange combination but try this out. Classic salmon easy to prepare but with a taste of red coconut curry. Definitely worth it to give it a try and it is a quick and easy complete meal.

Ingredients

  • 200 gram piece of salmon (no-skin)
  • 1 teaspoon red curry paste
  • 200 grams coconut milk
  • 1 teaspoon organic honey
  • Salt to taste
  • 1 teaspoon coconut oil

Prep Instructions

  1. On a pan heat up coconut oil. Add curry paste and fry for 1-2 minutes.
  2. Add coconut milk and honey. Whisk well curry paste to integrate with coconut milk and honey to create a smooth curry sauce with no lumps.
  3. Add salmon, set heat to medium-low and cover with a lid.
  4. Cook for 20 minutes.
