SCRAMBLED EGGS ON VEGGIES AND BLACK BEANS

I have 2 types of breakfasts. It usually come down to rolled oats with a selection of some seasonal fruits and eggs with some veggies and beans. This recipe is an example of the latter. Very simple and nutritious. It keeps me energized for longer. Eggs and beans let me tell you I really like. Let’s get rolling Foodies

Ingredients

  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 onion, chopped
  • 2 whole eggs
  • 1/4 cup cooked black beans
  • 1 teaspoon olive oil

Prep Instructions

  1. Heat oil on a medium non stick skillet.
  2. Add the veggies and saute for 5 minutes.
  3. Lower heat to medium low and crack the eggs.
  4. Gently scramble the eggs and mix with veggies with a wooden spatula.
  5. Serve the eggs and veggies with a portion of black beans on the side.
