SCRAMBLED EGGS ON VEGGIES

EGG WHITES ON VEGGIES OMELETTE

Lean and powerful, nutritious breakfast. But I also have it as a classic office snack or a small meal. Takes 15 minutes to make, is colorful and filling. The veggies add the colors and texture. Believe me you won’t miss the yolks. Let’s get rolling Foodies!

Ingredients

  • 1/2 cup egg whites
  • 1/2 red bell pepper, roughly chopped
  • 1/2 red green pepper, roughly chopped
  • 1/2 onion, roughly chopped
  • 2 slices bacon or pancetta
  • 4 ripe small tomatoes
  • 1 piece of whole wheat bread
  • 1 teaspoon olive oil

Prep Instructions

  1. Heat up the oil on a medium pan and add vegetables. Cook for 5 minutes until soft.
  2. Add egg whites and leave in on the pan without mixing until they become firmer. Only then gently mix and integrate with the cooked vegetables. Cook for additional 3-5 minutes.
  3. Serve with ripe tomatoes sprinkled with olive oil and a nicely toasted piece of whole wheat bread.
