SCRAMBLED TOFU THAI STYLE WITH RICE AND VEGGIES

SCRAMBLED TOFU THAI STYLE WITH RICE AND VEGGIES

This Asian style vegetarian meal became a must-have once a week treat for me. To prepare this you will need bunch of veggies (frozen and or fresh) and some firm tofu. The cool thing about it is that I scramble the tofu in a food processor. This way it integrates better with other ingredients and nuts. Let’s get rolling Foodies!

Ingredients

  • 1 onion, chopped
  • 1 carrot, cut into think slices
  • 1 cup snow peas (frozen or fresh)
  • 2 celery sticks, cut into think slices
  • 1/4 cup raw unsalted cashew nuts
  • 300 grams firm tofu
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon sesame oil

Prep Instructions

  1. In a wok heat up sesame oil.
  2. Add vegetables and stir fry for 4-5 minutes to make them soft.
  3. Add hoisin sauce and soy sauce. Mix well.
  4. To scramble tofu fill up the food processor container and throw in firm tofu cut into cubes and pulse process it. Drain well.
  5. Add tofu to the wok with the fried vegetables and mix well.
  6. Add brown sugar and nuts. Mix well and cook on high heat for additional 2 minutes.
  7. Serve with a serving of jasmine rice.
