SHORT BEEF RIBS STEW WITH VEGETABLES

By far the best beef stew I have ever had. So meaty and the sauce that came out itself could serve as a main dish component. This meal cooks itself, does not consist of many ingredients and uses an inexpensive piece of beef. I wanted to test if one can make a decent beef stew based on decently priced beef cut. This meal became my favorite dish in recent months. And it comes with veggies too! Let’s get stewing Foodies!

Ingredients

  • 1 kg of short beef ribs
  • 2 cans of tomatoes (chopped or whole)
  • 2 small cans of tomato paste
  • 1 bigger onion, chopped
  • 1 teaspoon ground cumin
  • 2 tablespoons soy sauce
  • A pinch of spicy red pepper flakes
  • 1 cup brussel sprouts (fresh or frozen)
  • 1 cup green beans (fresh or frozen)
  • 1 large sweet potato, cut into 1 cm cubes
  • Salt

Equipment: Pressure cooker or slow cooker (significantly longer time to cook)

Prep Instructions

  1. Cut your beef ribs into palm-size pieces or best ask your butcher to do that. They have all the necessary tools to do so well and fast.
  2. Season the meat pieces with salt on both sides.
  3. In a pressure cooker heat up a jug of olive oil and when hot brown the ribs from each side.
  4. When all pieces have this nice brown color set the meat aside on a separate plate.
  5. Add tomato paste into the pressure cooker and give it a quick 2-3 minutes stir and cook session. Next add tomatoes and mix well and cook for 5 minutes.
  6. Add meat and make sure all the ribs are submerged in the tomato sauce mix.
  7. Add cumin, red pepper flakes and soy sauce. Top it with the onions. And add at least the minimum required liquid amount for your pressure cooker – it was 250 ml of water for my cooker.
  8. Close the pressure cooker lid and cook on high setting for 2 even hours. Be patients – it will pay off and you will thank me later.
  9. After 2 hours cooking the stew on high setting, release the pressure from your pressure cooker and set it aside.
  10. After opening the cooker give it a tender mix (not to de-fragment the structure of the meat on the bones as it will be VERY tender) and top with the vegetables: green beans, brussel sprouts and sweet potato cubes. Set the oven on low, cover with a normal lid (you can use the same lid but without sealing the cooker, just cover the stew from the top) and cook for around 20 minutes – long enough to gently cook and soften the vegetables.
