  1. Peel sweet potato skin and slice into pieces or cubes.
  2. Cook in water for 15 minutes.
  3. Set aside to cool down and serve or save for your office lunch as a post-workout meal side dish.

Cooked sweet potato is very low in Saturated Fat and Cholesterol. It is also a great source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese.

But in a nutshell sweet potato and standard potatoes are not that different. For the sake of carb sources variety I use both in my cooking ventures.

Just watch the quantities as both are basically loaded with carbs. Best way to ensure that the potato does not load up your wait is to deserve them by those who do not tolerate carbs that well. That is me of course.
