Slow-Cooked Carrots

Slow-Cooked Carrots

Nothing works better than simplicity. Simple slow-cooked carrots guarantee a rich, sweet, nutritious and inexpensive side that goes perfectly with your choice of protein. Browning them in a little bit of olive oil and oat crumbs makes the additional crunchy layer. Let’s get rolling Foodies!

Ingredients

  • 1 cup water
  • 2 slugs olive oil
  • 1/2 teaspoon salt
  • 10 carrots, peeled
  • 2 tablespoons, bread crumbs or ground rolled-oats

Prep Instructions

  1. Heat oil on a medium size skillet, add carrots and sauté for 3-4 minutes on high heat.
  2. Sprinkle carrots with salt, add the remaining water and cover with a lid. Cook for 20 minutes on medium heat. You can test with a fork if they are done. I like my carrots not too overcooked make sure to check.
  3. Put carrots aside and add a teaspoon or two of olive oil into the same pan, increase the temp and add 1-2 tablespoons of ground rolled oats or simply bread crumbs. Fry for a little while (2-3 minutes) until well combined and nicely browned. Then add the cooked carrots and swirl them around to get them covered in the oil/crumbs browned mix.
  4. Transfer carrots to a plate and serve.
