Smoked Butterfish Wholewheat Sandwich

Let me be clear: I LOVE SANDWICHES. I normally do not buy sandwiches as store-bought are usually loaded with preservatives, no lean proteins and fat. Not to mention the chewy bread. When I have a sandwich it is one that I myself prepare. Why? Well I want my ingredients to be of the best quality, I want my crunchy toasted whole-wheat bread. I want all the juice from the tons of  veggies in my sandwich. And I want my body to get a nutritious and complete sandwich with lean protein. If you also want all of these things you have to try this sandwich recipe. Super easy and tasty BIG TIME!!! Let’s get rolling Foodies!

SMOKED BUTTERFISH FILLET
PULLED SMOKED BUTTERFISH FILLET

Ingredients

  • 4 slices of whole-wheat bread, toasted
  • 200 grams of smokes butter-fish fillet (or mackerel, it is fattier but equally healthy and tasty)
  • Baby spinach or any other type of greens, coarsely chopped
  • Ripe tomatoes
  • Fresh cucumber, sliced
  • Fresh dill, finely chopped
  • 1 spicy green bell pepper, sliced without seeds
  • 1/2 onion, thinly sliced

Prep Instructions

  1. Toast slices of bread and set aside to let it cool down.
  2. On each slice of bread place a bunch of spinach or greens you are using. Add cucumber and bell peppers slices and the rest of vegetables.
  3. On one slice of bread on top of the veggies place a pulled fish and top with chives.
  4. Carefully close the sandwich with the second slice of bread and slightly press down to squeeze the sandwich to make it easier to grab and bit.
