Sour Cabbage, Bacon And Pasta Comfy Plate

Again one of the meals I dearly remember from my childhood when my parents tried to feed us quick and nutritious meal after a long working day. It is tasty, colorful, rich in flavor and calories. Come on it has pasta and bacon or pancetta in it so what did you expect. But you know what? Remember when you were a kid and nothing seemed to fatten you up? Yep it is all about the balance,┬ácalories in – calories out. So maybe not the perfect meal for a rather passive office work day but go to a quick gym class or walk the stairs and do not use an elevator that day and then have this simple and rich meal. Sounds like a plan?

  • 300 grams square shape pasta (or whatever pasta you happen to have in your kitchen)
  • 150 grams sour kraft cabbage, chopped roughly
  • 1 onion, thinly chopped
  • 100 grams pancetta or bacon
  • 2 teaspoons tomato paste
  • Spicy chili pepper flakes
  • Salt and pepper
  • Olive oil

Prep Instructions

  1. In a medium size pot cook your pasta al dente.
  2. On a non-stick skillet heat up 2 teaspoons of olive oil.
  3. Add striped bacon or pancetta and onions. Cook on medium heat for 5 minutes frequently mixing.
  4. Add tomato paste and mix well with fried bacon/pancetta and onion. Cook for 3 more minutes.
  5. Add sour kraft cabbage and cooked pasta. Mix gently to evenly distribute the sort of tomato, bacon/pancetta/onion paste.
  6. Cover with a lid and cook on slow for 25 minutes. Mix from time to time and you can also add a tiny bit of water to avoid burning it.
  7. Serve immediately, save leftovers for lunch and have a drink of cold buttermilk.
