Spicy Cilantro, Tomato and Chickpeas Salad

Fast, tasty, juicy, nutritious, colorful, spicy. What else do you want? And it’s just a salad. Yes it can be prepared in bulk so not only you can enjoy in the office. Let’s get rolling Foodies!

 

Ingredients

  • 400 grams chickpeas (I used canned version this time)
  • Bunch of cilantro, roughly chopped
  • 3 ripe tomatoes, cut into wedges or just smaller pieces
  • 2 teaspoon extra virgin olive oil
  • Pinch of salt and red chili pepper flakes

Prep Instructions

  1. In a medium bowl mix all ingredients.
  2. Place in a fridge to cool down for 30 minutes or eat right away if you are that hungry.
