Great vegetarian variation with tofu. You need 1 pumpkin, some tofu and spices with tomato paste. That’s it. It cooks itself and is yummy juicy. A complete meal and a vegetarian twist for meatless Mondays. Let’s get rolling Foodies!
Ingredients
1 pumpkin cut in half, seeded
200-300 grams firm tofu, cubed
1/4 cup tomato paste
Chili pepper flakes
Salt
2 tablespoons of olive oil
Prep Instructions
Mix the tofu with the tomato paste and olive oil.
Sprinkle the mix with salt and spicy pepper flakes.
Start your oven and heat it till 180 C degrees.
Cut the pumpkin in half, rub off the skin and remove the seeds.
Fill pumpkin halves with the tofu – tomato – spices mix.
Cook in the oven for 30 minutes until pumpkin becomes soft.
