Ingredients
A bunch of fresh spinach leaves
1-2 cups of beans, pinto or black
2-3 garlic cloves
1/4 cup freshly squeezed lemon juice
Salt, pepper and red chili flakes
2 tablespoons olive oil
Prep Instructions
On a skillet heat up the olive oil, add thinly chopped garlic and saute for 3 minutes.
Add spinach leaves and mix well with the sauteed garlic, add lemon juice, cover with a lid and cook on low for 5-10 minutes.
Add pinto or black beans, mix well and add salt to taste. Cook for additional 5 minutes.
