SPINACH AND BEANS

This meal is like a plug and play side dish to any of your favorite protein. You mix the ingredients, add some spices and herbs and saute all for 5 minutes. What you receive is a very rich side dish with tons of fiber. Let’s get rolling Foodies!

Ingredients

  • A bunch of fresh spinach leaves
  • 1-2 cups of beans, pinto or black
  • 2-3 garlic cloves
  • 1/4 cup freshly squeezed lemon juice
  • Salt, pepper and red chili flakes
  • 2 tablespoons olive oil

Prep Instructions

  1. On a skillet heat up the olive oil, add thinly chopped garlic and saute for 3 minutes.
  2. Add spinach leaves and mix well with the sauteed garlic, add lemon juice, cover with a lid and cook on low for 5-10 minutes.
  3. Add pinto or black beans, mix well and add salt to taste. Cook for additional 5 minutes.
