Spinach Cream Soup

There is nothing better than a hot gorgeously nutritious soup. I grew up on soups. They were a bit heavier and with more flour than I would use today but soup is a symbolic home-cooking dish for me. I love soups. And this one my friends is my newly acquired Vitamix superman blender. But you can do such a creamy delight using any other blender or no blender at all. Let’s get rolling Foodies!


  • 2 teaspoons olive oil
  • 4 garlic cloves, chopped
  • 2 cups chicken or vegetable stock
  • 1 cup frozen spinach or a bunch of fresh spinach leaves, chopped
  • Salt to taste

Prep Instructions

  1. Heat olive oil in a skillet over medium heat and saute sliced garlic cloves (3 min).
  2. Add spinach to the garlic and cook for 10 minutes on medium heat.
  3. In a separate pot heat up the stock and then add the sauted spinach. Mix well and bring to boil.
  4. Lower the heat to low, add salt and pepper to taste and simmer for 15 minutes.
  5. After that pour half of the soup into a blender and give it a nice spin. You may want to wait until the soup cools down a little before blending it. Be very careful when blending to avoid any mess in your kitchen.
  6. Once blended into a silk-smooth consistency add the mix back to the pot and mix with the remaining soup.

Serving recommendation: hot.

Difficulties: The only difficult part of making this soup was the noise out of the blender. Vitamix tends to be pretty loud creature on the highest program. But it made it all up in the smoothness of the soup.
