SPINACH EGG NEST SALAD

Spinach & Egg Nest Salad

Very easy and complete meal. One that can be composed of the simplest ingredients present in all Work Week Foodies fridges. Spinach + Egg + Bell Peppers = Spinach & Egg Nest Salad. Adding a nice salad dressing on top of the nest makes is a perfect but light and filling, nutritious complete meal. And the colors and textures of it are very deep and crunchy.

Ingredients

  • 2 cups of roughly chopped or whole baby spinach leaves
  • 1 red or green or yellow bell pepper cut into smaller pieces
  • 2 whole egg
  • A few walnuts
  • Olive oil
  • Salt and red pepper flakes

Prep Instructions

1. Wash all vegetables under cold water.

2. Place baby spinach leave into a bowl in a form of a nest.

3. Sprinkle with olive oil to make sure there is some moisture with heart healthy fat in between the greeny leaves.

4. Top spinach with chopped bell pepper and nuts.

5. In the meantime fry the eggs in a nice round shape pan.

6. When the eggs cool down place them on top of the salad and sprinkle with salt, red pepper flakes and olive oil.

Nutrition Facts & Tips

Feel free to use different types of nuts. You can also use different types of leavy green veggies like bok choy or ice salad. Adding additionally some raisins could sweeten things up. As always at Work Week Foodie be creative and add as much variety as possible. You could recreate this simple salad in many different ways.
