Stir-Fried Duck With Whatever You Like

Stir-Fried Duch With Whatever You Like

Duck is perfect for stir-frying – excitingly juicy inside and crispy on the outside. Fortify this with a variety of veggies and make a stir-fry supply for more than one meal. Let’s get stir-frying Foodies!

Ingredients

  • 2 duck breasts (around 200 grams each)
  • 2-3 teaspoons five-spice
  • Sea salt
  • Pepper, freshly ground
  • 2 tablespoons coconut oil
  • 2 red bell peppers, sliced
  • 2 cups snow peas or green beans (fresh or frozen)
  • 4 garlic cloves, finely sliced
  • 1-2 fresh red chilies, no seeds and finely chopped
  • 2-3 thumb-sized pieces fresh ginger, peeled and grated or chopped
  • 2 oranges or a cup of fresh pineapple, cubed
  • 1 tablespoon honey
  • 1 handful fresh mint leaves
  • 4 tablespoons soy sauce (you might want to use low-sodium version)

Prep Instructions

  1. FRY-PREP THE DUCK
    Cut the skin of the duck with a sharp knife (don’t cut off any fingers:-). Sprinkle the breasts with the five-spice and a small pinch of salt. Put the seasoned breasts skin side down in a cold wok. Next heat the wok slowly up to a medium temperature so the white fat converts into gorgeous thin crisp. Cook the breasts on the skin side for approximately 10-12 minutes and after that turn the breasts over and cook for a additional 5 minutes.
  2. BRING THE TEMP UP
    Set the medium cooked breasts aside on a plate. Remove the duck fat from the wok and wipe it with a paper towel. Have your veggies and seasonings ready for the stir fry. Make sure your wok is really hot.
  3. ADD THE VEGGIES
    Add the coconut or sunflower oil to the hot wok. Very carefully distribute the hot oil around, to cover the whole pan. Add your green beans, bell peppers and snow peas and stir around. Next add the garlic, chili and ginger. Continue stir-frying on the highest heat for 2-4 minutes. Remove the veggies to a plate. Slice up your duck breasts into little slices (around 1 cm wide max) and put them back into the wok with any resting juices from the duck. You can sprinkle again with a pinch of five-spice. Cook the duck slices until nice and crispy.
  4. COMBINE IT ALL
    Transfer stir-fried veggies back into the wok, and lower the heat. Add oranges, honey, mint leaves and soy sauce. Mix it all and serve. Serve with cooked rice or have it the lean way with just the veggies.
